Roasted Sweet Potatoes with Pomegranate Glaze


Two large sweet Potatatoes or Yams, cut into two inch chunks

1/4 cup olive oil

1/4 cup honey

Fresh thyme from about 2 sprigs(some fresh chopped rosemary would also work)

3 tablespoons pomegranate molasses

1 Pomegranate


Preheat oven to 400. Line a baking dish with with tin foil (lots of sticky ingredients here!).

Mix sweet potatoes, herbs, salt and pepper,  olive oil, and honey in a large bowl.  Transfer to baking dish.  Bake for 45 minutes.

Remove from oven, and place in serving dish.  Drizzle with pomegranate molasses, and pomegranate seeds.
