Pomegranate Vinaigrette

Ingredients:

  • 5 Tablespoons of Pomegranate Juice
  • 3 Tablespoons of Red Wine Vinegar
  • 1 Small minced Shallot
  • 1 Tablespoon of honey
  • ¼ Cup of Olive Oil
  • Salt and Pepper

Directions:

Combine Vinegar, Pomegranate Juice, Hone and Shallot. Mix well and let sit for 10 minutes. Whisk in Olive Oil and Salt and Pepper to taste.

This dressing goes well with a spinach salad with nuts and pomegranate seeds, a Boston Bibb salad, or whatever you have on hand. Would also be a lovely sauce on sauteed green beans with almond slivers.
