Pomegranate Yogurt dip with Cilantro

Ingredients:

  • 1 pomegranate
  • 2 cups chilled plain yogurt, thick style or regular depending on taste
  • 2 green onions, minced
  • 1/4 cup finely chopped fresh cilantro
  • Fresh mint sprigs, for garnish

Directions:

Gently mix yogurt, scallions and cilantro. Cut the pomegranate in half crosswise and remove seeds in sections, Pull the seeds off the membrane.

Transfer the dip to a serving dish and garnish with mint sprigs and the reserved pomegranate seeds.

Serves: 2 1/2 cups
