- 5 Tablespoons of Pomegranate Juice
- 3 Tablespoons of Red Wine Vinegar
- 1 Small minced Shallot
- 1 Tablespoon of honey
- Â¼ Cup of Olive Oil
- Salt and Pepper
Combine Vinegar, Pomegranate Juice, Hone and Shallot. Mix well and let sit for 10 minutes. Whisk in Olive Oil and Salt and Pepper to taste.
This dressing goes well with a spinach salad with nuts and pomegranate seeds, a Boston Bibb salad, or whatever you have on hand. Would also be a lovely sauce on sauteed green beans with almond slivers.
