Ingredients:

1/4 Cup of Pomegranate Juice
2 ounces light rum or white rum
1 tablespoon of superfine sugar of simple syrup
1 Tablespoon fresh lime juice
club soda or seltzer water
fresh mint
ice
Directions:
In a cocktail glass muddle the mint (with a muddler or a fork), to release the mint fragrance. In a cocktail shaker add the rum, pomegranate juice, lime juice, sugar and ice. Shake well. In the mint cocktail glass, now filled with a handful of ice, strain the contents of the cocktail shaker into the glass. Garnish with a lime twist. Enjoy!
This recipe also lends itself for groups — just adjust the ingredients to the number of guests, and mix it in a pitcher.
